I’ve really been wanting to bake lately. However, with that comes firing up the oven and I just will NOT do that in the middle of the day, in the middle of a Spanish Summer. I’m also not to be trusted with baked goods.
I decided to go for the raw approach. I came across this recipe and it looked fantastic. It had the perfect mix of fudgey-salty-chocolatey goodness and it so happens to be Paleo. I’m not  Paleo, but I know a good recipe when I see one! 
I did change a few things. I didn’t have raw cashews so I subbed 1/2 C cashew butter. Since I would be missing ‘the crunch’ from the cashews, I rolled my balls in chopped hazelnuts. I also did half dates/half figs. I left out the honey because the fig/dates are sweet by themselves. 
Also, if you so happen to make these, I highly recommend dusting your hands in cacao powder before rolling. They can get sticky!
These do pack a punch in the calorie department. I rolled 16 large-sized balls which came out to 140 calories each. Not the lowest calorie dessert but most definitely a nutrient dense, healthy one! 
Let me know if your try these out. They came out fantastic in my kitchen! It’s going to be hard resisting shoveling them in, but they’re perfect for an after workout treat.
